Vegan "Impossible" Taco Salad

Sometimes finding vegan crowd-pleasers might seem difficult. I have noticed the longer I am vegan the more my taste buds change to like different foods and flavors. But this will please even the biggest red-faced meat eater.

Going to a Superbowl party, a cookout? This is a great vegan party food recipe, even for people who refuse to see how awesome it is to be at the pinnacle of moral superiority like you do!

What is a good vegan cookout or party recipe?

What goes in the Impossible Taco Salad?

  • Impossible Ground "Beef" - You can use any type of vegan, vegetable-based ground beef. But Impossible has a good flavor and an even better texture.

  • Roma Tomatoes - You can use Roma tomatoes or you can use grape as well.

  • Taco Seasoning - What's taco salad without a good taco seasoning? If you do not have taco seasoning you can follow our recipe here.

  • Catalina Dressing - Catalina dressing is really easy to make. Considering it's not usually vegan it might be necessary to try making it yourself.

  • Green Onions and Red Onions - Let's be real is it even a recipe if it doesn't have garlic or onions (I think not)

  • Iceberg Lettuce - Um the salad portion duh.

  • Black Pitted Olives

How long will the recipe last?

Sadly this recipe is not the type of recipe that lasts for a good reason, because it's so dammed good. This is a great vegan snack for super bowls, cookouts, and parties. You "could" refrigerate but I suggest just eating it all at once.

The Recipe

See the ingredient list above for replacements and descriptions.

  • Green Onions

  • 1 Clove Garlic

  • 1 Medium Red Onions

  • 1/2 Package Impossible Ground "Beef"

  • 1/2 Cup Black Pitted Olives

  • 2 Roma Tomatoes

  • 1 Head Iceberg Lettuce

  • 1 Package Taco Seasoning (or equivalent)

  1. Cut a whole bunch of green onions into thin rings.

  2. Dice the tomatoes, red onions, and black olives.

  3. Finely shred the lettuce.

  4. Mince one clove of garlic.

The Taco "Meat"

  1. Combine garlic with the Impossible Meat and taco seasoning and mix until well combined.

  2. Place the mixture in a pan on medium heat and stir until the Impossible Burger is seared brown and cooked through.

  1. Be sure to let the impossible meat mixture cool to near room temperature because no one likes a hot salad.

  2. Once the meat is cool, in a large mixing bowl combine all the ingredients.

  3. When ready to serve add the dressing as needed. If you add the dressing and let it sit its stands a chance to not be as good.

  4. Enjoy!
